Easy, Energizing Breakfast Recipe

As cliche as it is, I’m trying to eat healthier and cook more as part of my many (many) resolutions. That being said, I’m a breakfast person. I need a glass of water, decent breakfast and large coffee everyday — even work days — to start off on the right foot. I normally go the yogurt and fruit route, but wanted to try something more protein-packed and car-friendly. These mini egg muffins are great. They’re basically muffin-sized omelets that let you bake a batch at once and then zap for the next few mornings.


  • Eggs (I used 4 eggs for 5 muffins)
  • Splash of milk
  • Mix-ins of your choice (I used green peppers, tomatoes and goat cheese)
  • Seasonings: salt, pepper and any other flavor you like


  • Preheat oven to 350 degrees
  • Grease muffin tin
  • Chop mix-ins into small pieces and divvy up into empty muffin tins
  • Whisk eggs and milk and pour over mix-ins (leave about half an inch on top for the egg to rise)
  • Bake for about 20 minutes or until they pass the toothpick test

2015, I’m Ready For You

New Years Eve fortune

I’m a huge fan of New Years — and for more reasons than tossing confetti and clinking flutes with loved ones (not to say those things aren’t fully amazing). I love the act of reflecting on the year (complete with top 40 countdowns and google most-searched lists) and switching gears to focus on what we want to get out of the year ahead.

I’m so lucky to say that 2014 was the best year of my life, full of exciting changes and major life moments. I got engaged to my favorite guy in the world, started a new job at T.J.Maxx and bought a wonderful little home that we’re slowly setting up. So for me, 2015 has a lot to live up to — but I have full faith it’ll be the best year yet, and I’m taking my NYE fortune cookie as a good omen.

My year ahead will be filled with wedding-planning festivities (we’ve officially entered 6-months territory), continuing to make our condo truly feel like ours, fun and challenging work at TJs and hopefully lots of time with friends and family.

I’ve read that writing down your intentions helps solidify them to yourself and to the universe, if you believe in that kind of thing (which I do). I have a bazillion resolutions but the one I want to call out is to get back into my personal blog. I’m hoping to post a few times a week about the topics that are inspiring me at the moment: wedding DIY, recipe reviews (cooking more is also on the resolution list), decorating ideas, style stories, Boston happenings… Fingers crossed I keep it up!

DIY Wall Art: View from the Air

I’ve been trying to figure out what to hang in our bedroom and didn’t have something as wide as I’d like. Instead of one piece, I decided to go with a gallery of four photos I took from an airplane window.
